The origins of the Delmonico steak remain a mystery. It is believed to have been created in the mid-1800s by Delmonico's Restaurant in New York City. The steak is cut from the longissimus dorsi muscle where the rib and loin primals converge.

Ours is a Chuckeye Delmonico steak.  Similar in texture to a Ribeye, the 3" of beef from the rib right in front of the ribeye.  Dry Aged for minimum 21 days.  Try one today!
