Quiero que mis invitados tengan una gran experiencia y una excelente comida. Para las fiestas y, especialmente, cuando queremos agasajar a nuestras personas favoritas, el costillar de primera siempre es mi primera opción.
Hay un millón de maneras de hacer costillas de primera, y mi favorita es el método científico que se encuentra aquí .
TL/dr: 1 libra de costilla de primera calidad con hueso por persona.
¡Eso está precocido!
Los asados de costilla entera pesan entre 18 y 24 libras cada uno. Contando de adelante hacia atrás, las costillas son del 6 al 12.
Los asados de media costilla de primera calidad tienen 3 o 4 costillas cada uno. Los nuestros pesan entre 8 y 12 libras cada uno, según el animal.
Se puede adivinar que después de cocinarlo y quitarle el hueso (¡excepto para el caldo!) el producto final pesa menos de 1 libra por persona, ¡pero aun así es mucha carne!
