Around here, Creamed Chipped Beef on Toast—sometimes known by its military nickname "SOS" was a pantry staple, a weeknight comfort, and a Sunday supper all rolled into one. And while the original might’ve come from a jar, we’re proud to bring it back the Creamery Creek way: with our own dry-aged, brined, and sliced beef.
What is “Chipped Beef” Anyway?
Chipped beef is a thin-sliced, cured beef that’s been dried just enough to preserve it, but still tender enough to sauté or simmer. It’s not jerky, it’s made to be warmed, creamed, folded into eggs, or tucked between bread slices. And when it’s made from our own dry-aged beef, the flavor is rich, savory, and just the right kind of salty.
Where “SOS” Got Its Name (and Why It Stuck)
The dish has roots in military kitchens, where it earned the cheeky nickname “S*** on a Shingle.” Troops were fed a version made with chipped beef in a creamy gravy, served over toast or biscuits. Whether you call it SOS, creamed beef, or chipped beef on toast, it stuck around for a reason, it’s simple, hearty, and downright satisfying.
How to Make It with Creamery Creek’s Dried Sliced Beef
Ingredients:
- 4 oz Creamery Creek Dried Sliced Beef
- 2 Tbsp Wisconsin Butter
- 2 Tbsp flour
- 1 ½ cups milk (or half-and-half for extra richness)
- Black pepper to taste
Toast or biscuits for serving
Directions:
Roughly chop or tear the sliced beef. In a skillet, melt butter over medium heat. Whisk in flour to form a roux; cook 1 minute. Gradually whisk in milk; stir until smooth and thickened.
Add beef and simmer until heated through. Spoon over toast. Add black pepper to taste.
