Farmer Beef Stew
Ingredients for Farmer Beef Stew
- 1 1/2 pounds Creamery Creek Beef Stew Meat OR 3lb Creamery Creek Chuck Roast
- 4 tablespoons Wisconsin AA butter
- 2 tablespoons flour
- 1 1/2 pounds small red potatoes
- 1 cup chopped onion
- 1 cup diced celery
- 1 cup diced carrots
- 3/4 cup diced parsnips
- 3 cloves crushed garlic
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 sprigs fresh thyme
- 12oz light Wisconsin beer
- 3 cups homemade beef broth (from Creamery Creek bones saved from previous recipes!)
Instructions for Farmer Beef Stew
Melt butter over med-high heat in a large Dutch oven or pot.
Add half of the stew beef so the pot isn't crowded. Cook until browned on all sides. Repeat with the second half.
When all the beef is browned, place it all back into the pot. Stir in the flour. Cook for 2 more minutes.
Add the potatoes, onion, celery, carrots, parsnips, and garlic. Add the thyme sprigs and the salt and pepper.
Pour in the beer and the water.
Bring to a simmer over medium heat, reduce heat to low, and simmer until the beef and vegetables are tender, about 2 hours.
Stir in fresh parsley before serving.
