Took a chance on Creamery Creek after finding them online and hallelujah- am I ever glad I did!

Ordered a 6lb+ roast for our Christmas dinner and did it ever get rave reviews.

I let it thaw from frozen on about the 18th, then salted it heavily and put it on a rack in the fridge from the 22nd-25th.

The results were spectacular. This was a fantastic roast that really impressed the family and our guests.

We undoubtedly will be ordering this treat again and thank you for making our holiday event more memorable!

The *only* teensy tiny suggestion I'd have is possibly leaving a bit more fat cap on for rendering during cooking.

Outside of that extremely minor complaint, this was one of the finest roasts I've ever had.
