This unique cut is expertly prepared from the shoulder, offering a fine texture and great taste in every bite. It’s shaped like a pork tenderloin—wide on one end and tapering to a point, making it a rare find.

Cooking Tip: For best results, sear the steak on all sides in a hot cast iron skillet for 2-3 minutes. A light seasoning of salt and pepper is all it needs to let the flavors shine. For a medium-rare finish, aim for an internal temperature of 125°F and be sure to slice against the grain.
