Our Au Jus Recipe: A Beautiful Compliment for Dry Aged Beef

If you're enjoying a delicious prime rib dinner, you can not forget the au jus!

This recipe can't be attributed to me, it's on a handwritten card in my file box.  This is the au jus recipe I make over and over, and at this point-- it's foolproof!

Au Jus Ingredients:

  • 1/2 cup of fatty beef drippings from your dry-aged beef roast 
  • 2 tablespoons of all-purpose flour
  • 2 cups beef broth
  • Dash Worcestershire sauce
  • Salt and Pepper to taste  (we like salty au jus!)

Mix the beef drippings and flour.  Then gradually pour in the beef broth and add seasonings.  Simmer for a bit, and the au jus will concentrate as steam rolls off.

Multiply this recipe as needed.  You will need it for leftovers too!

Serve in the cute little condiment cups and dip in your favorite beef.  Especially French Dip Sandwiches!
